What is the gluten?

The World Gastroenterology Organization defines gluten as: “the rubbery protein mass that remains after washing wheat dough to remove starch. Gluten is present in wheat, rye, and barley.” The intolerance is one of the main symptoms of celiac disease.

What values are analyzed?

Gliadin, transglutaminase and endomysium are analyzed, these values allow an accurate diagnosis of the disease.
